Main dish meals outdoors don’t have to be boring and simple, they can be tasty, healthy and interesting if you take a bit of time and pre-plan them.
Outdoor cooking can take place on a cook stove, on a grill or even on a fire, encircled  with a ring of stone and the pan set direction on the fire ring, which I”ve done, or with a cast iron pot hung from a tripod or settled directly onto coals or charcoal.. I personally like the latter and use it a great deal.

There is also the cowboy cookset method that you can try, and we’ll go into all of those later, in other articles..

There are multiple ways to cook outside and I suggest you try them all to see what works best for you and what gives your main dish meals the best flavor for your particular taste.
These are two simple main dish meals that you can try  and see if you don’t get rave reviews.

Stuffed Burgers:

*  Ground Chuck
* Cheese of Choice
* Salt
* Pepper
* Garlic Salt
* Bacon
* Tomato
* Buns

Directions:
Form medium size meatballs and then stuff with cheese. Once this is done, flatten into patties. Season with salt, pepper and garlic salt, then cook over fire. In a small skillet or foil pack, cook the bacon. Put this and the remaining ingredients on a nicely toasted bun and you have a great burger.

Comments:
This is particularly tasty when its cooked over a real wood fire.  THe smoke flavor integrates with it to make it more than delicious.
my personal favorite cheese to use is a monterey jack or a mixture of colby/jack cheese however you could, if you like the spiced up effect, also use a pepper cheese.

Campfire Roast Beef

*  1 Large Beef Roast
* 1/2 Lb. Bacon
* 1 Tsp. Garlic Powder
*1/2 cup water or beef broth/boullion
* 1 Tsp. Celery Salt
* 1 Tsp. Salt
* 1/2 Tsp. Black Pepper
* Heavy Duty Aluminum Foil

Directions:
Tear a piece of foil large enough to hold roast and allow for air space, cup edges to hold liquids. Place the roast on the foil, pour1/2 cup water over the top of it. Spice as indicated. Drape with bacon. Wrap with foil, leaving air space over the top. . Place on side of low fire. Cook time is about 20 minutes per pound.

Notes: I always cut open a few large potatoes, wrap them  in foil and toss them on the side of the grill or fire pit, and they will usually be done about the same time as the roast.
